JACKET POTATO

Ingredients for two people:

two large Desirée potatoes (225-275 grs)

a little olive oil

rock salt crushed

a little butter

salt and freshly milled black pepper.

Wash and dry the potatoes well with cloth and leave them to dry as much as possible.

Prick with a fork a few times. Later pour a few drops of olive oil over the skin and rub all

over. Afterwards, rub in some crushed salt (for crunchiness). Place the potatoes straight onto the centre of the shelf and bake for 1 hour and ¾ or two hours until skins are crisp.

When you are ready to serve, slit each potato in half lengthways and top with the chive sauce.

Serve immediately for crispness.

For the chive covering:

1 cup of sour cream

¼ teaspoon mustard

1/ teaspoon of coarse salt

some white pepper

½ cup freshly chopped chives

Add sour cream to a bowl with the mustard, salt pepper and chopped chives leaving a teaspoon back to sprinkle on top. Stir all ingredients.

BAKED POTATO WITH MINT BUTTER

Ingredients:

half a kilo of baby potatoes with skin

some butter

some salt.

some fresh mint finely chopped

Wash the potatoes and boil with skin. When boiled, place them in a bowl

and break them a bit. Add some butter, salt and mint to taste and serve straight away. They are delicious with some roasted meat.
